Thai Peanut Chicken Stir Fry

I made this for dinner and the family loved it. What you see in the picture is only half of what this made. We fed 2 adults and 2 children ages 2 and 4. I can assume this would easily feed 4-5 adults or a family of 6. At Costco they have a vegetable blend just for stir fry. It is a large bag next to their other vegetables. I hope you enjoy!

Ingredients

2 cups uncooked white rice
4 cups water

3 T soy sauce
2 T creamy peanut butter
2 tsp red wine vinegar
1/4 tsp red pepper flakes or cayenne pepper
1/4 cup water
3 T olive oil
4 boneless skinless chicken breasts -cut into thin strips
3 T chopped garlic
1 tsp ginger powder
3/4 chopped green onions
3 cups of chopped or frozen vegetables
1/3 cup of unsalted dry roasted peanuts

Directions

1- Combine rice and water into a saucepan over medium-high heat. Bring to a boil, then reduce heat to low cover and simmer for 20 minutes, or until rice is tender. In a small bowl stir together soy sauce, peanut butter, vinegar, red peppers and water. Set aside.

2-Heat oil in skillet or wok over high heat. Add chicken, garlic and ginger. Stirring constantly until chicken is golden on the outside, about 5 minutes.

3- Reduce heat to medium, and add green onions, vegetables, peanuts and peanut butter mixture. Cook stirring frequently, for 5 minutes or until vegetables are tender and chicken is fully cooked through. Serve over rice and Enjoy!

Quick and easy Peanut Butter Blossoms

Some of you may recognize the cookie part to be the same as these peanut butter cookies. However this recipe was sent to me from my Aunt and has a little twist from the other cookie. I made mine a little bigger so only got 27 cookies. Easy and so fun. Hope you enjoy!


Ingredients:
1 egg, beaten
1 cup granulated sugar.
1 cup peanut butter, smooth or chunky
1 bag Hershey Kisses

Directions:

Preheat oven to 350
(Unwrap enough kisses for expected number of cookies.)

Mix the sugar into the beaten egg. Mix well to dissolve sugar. Fold in
peanut butter.
Egg mixture consistency is moist and sticky but will dry in folding process.

Place in refrigerator for 30 minutes.
Remove from refrigerator and pull off small pieces of dough and roll into
marble size balls.
Place the peanut butter balls on dry cookie sheet.
Bake for 8 to 10 minutes.
Remove from oven and immediately add kisses by pushing a kiss gently into
center of cookie.

Different Alterations

If using dark chocolate kisses, gently push into cookie and let stand if you
want them to hold their shape.
If you want them to puddle, and have just the tip, put into oven for 10
seconds.
Dark Chocolate melts quickly and will not stand up in oven heat.

If using milk chocolate kisses, place a Kiss on top of each cookie.
Push them in slightly. Place back in oven for 15 to 20 seconds so kiss
adheres to the cookie.
Remove from oven and let cool completely on wire rack, or after cooling
slightly, place on plate and place in refrigerator to cool and harden
chocolate. Milk chocolate Hershey kisses will keep their shape.

(OR for plain PB cookies, Flatten unbaked dough with criss cross pattern
with fork dipped repeatedly into small cup of granulated sugar While on
cookie sheet and before baking)
Makes 45 small cookies

Peanutty Goober Cake

1 package yellow cake mix
1 cup creamy peanut butter
1/2 cup packed light brown sugar
1 cup water
3 large eggs
1/4 cup vegetable oil
1 cup peanut butter/chocolate morsels
1 cup chocolate covered peanuts (goobers)

Preheat oven to 350 degrees. Lightly grease 13x9 inch baking pan.
Beat cake mix, peanut butter and sugar in large mixer bowl until crumbly. Set aside 1/2 cup crumb mixture. Add water, eggs and oil to remaining crumb mixture; blend on low speed until moistened. Beat on high speed for 2 minutes. Stir in 1/2 cup morsels. Pour into prepared baking pan.
Sprinkle Goobers, remaining morsels and reserved crumb mixture over batter.
Bake for 40-45 minutes or until wooden pick inserted in cake comes out clean. Cool completely on wire rack.

Peanut Butter Frosting

This is a great frosting on Chocolate cake it is your choice though if you want it chunky or creamy. But like the cream cheese frosting you will have to add more powdered sugar to decorate with it. I am personally a big fan of light and creamy frosting that isn't just sugar. It allows the other flavors to come out more.

Ingredients:

1 cup peanut butter
1 stick butter
1 tsp vanilla
1 1/2 cups powered sugar.

Directions:

Cream peanut butter and butter together. Add sugar and mix well.
